What crops are actually profitable in vertical farms?

Everyone grows lettuce but the margins seem thin. Microgreens are better but the market is getting saturated. Herbs have good margins but limited volume. Strawberries look promising but the tech is expensive. What are people actually making money growing? Would love to hear from anyone growing something unusual or finding a niche that works.
